Cin is a spice farmer who gets drunk and accidentally frees a demon. Now they're on a road trip together. He's enormous and red and smitten. She's unimpressed and hungry. Lemming writes humor that lands because the FMC is funny in a way that feels real, not scripted. The "normal person stuck in a fantasy adventure and deeply annoyed about it" energy is perfect.
Dealing with Dragons by Patricia C. Wrede
Princess Cimorene is bored with being a proper princess, so she volunteers to be a dragon's captive. Kazul is the dragon, and Cimorene organizes her library and cooks cherries jubilee. Knights keep coming to rescue her and she keeps telling them to go away. This is YA but the humor holds up for adults. The wit is dry and the princess-refuses-to-be-rescued premise was ahead of its time.

Ruby Dixon doing space pirates. Adiron is the class clown of the alien brothers. Jade is a rescued human slave who is NOT in the mood for his nonsense. The banter between "alien who thinks everything is hilarious" and "human who has been through hell and is not charmed" is the whole book. He wears her down. She never stops roasting him. It works.
A Witch's Guide to Fake Dating a Demon by Sarah Hawley
Mariel accidentally summons a demon and the only way to get rid of him is to give him her soul. Instead, they fake-date while she figures out how to break the deal. Ozroth is a grumpy demon who falls hard and fast and has zero poker face about it. Hawley makes the fake-dating formula feel fresh by adding demon bargain stakes. The small-town magic setting gives it a cozy comedy backdrop.

Alosa lets herself get captured by a pirate crew because the map she needs is on their ship. The captain's son, Riden, is her reluctant guard. She's smarter than everyone on the ship and doesn't bother hiding it. The banter between Alosa and Riden is competitive and sharp. She's playing him, he suspects he's being played, and they both enjoy the game more than they should.
Sorcery of Thorns by Margaret Rogerson
Elisabeth grew up in a magical library where the books are alive and dangerous. Nathaniel is a sorcerer (her supposed enemy) with a sarcastic demon servant. The banter comes in threes: Elisabeth's earnestness, Nathaniel's dry wit, and the demon's commentary. The library setting is gorgeous and the humor never undercuts the stakes.
